ingredient in chinese chili oil recipe?
i want to know what exactly is that ingredient in chili oil that gives it a sweet and slightly sour taste. it looks like a paste residue in the oil, i wonder if its red bean paste.
I am a former chef and the ones in the chinese restaurant is made from heating the oil and adding chili flakes to absorb the oil, I make mine the same but add abit of sesame oil once it has cooled down, just get the oil hot and turn it off, add the chili flakes, and let cool completely, add the sesame oil, sometimes I add some garlic granules, I use this as finishing oil on fish or stir frys, but like some in soups to or in my hot and sour soup mix
